Parkmore Distillery (28 Oct 2001)
Glendullan蒸留所からKeith-Dufftown Railwayを挟んだ向かい側に残るParkmore蒸留所。ウィスキーブームの真っ只中の1894年に創業された蒸留所はそのブームが過ぎ去った1931年に閉鎖されるという時代に翻弄された歴史を持つ。
閉鎖後は広い敷地に建てられたウェアハウスだけが使用された。今でもウィスキーを造っていてもおかしくない蒸留所は後に"1890年代のウィスキーブームの中で、外見的には最も完全に生き残った失われた蒸留所"という称号を与えられ、人々の記憶に残った。現在も観光案内用のフリーペーパーの地図には名前とその位置が書かれている。
There is a ruins of old distillery, called Parkmore Distillery in Dufftown. It lies on the opposite side of Keith-Dufftown Railway from Glendullan Distillery. It was build in 1894, in the middle of the Whisky Boom in 1890s. And closed in 1931, after the finish of the boom. It has a history of making a fool by the boom.
After the closing, warehouses had been used by other disttillers until 1980s because of massive capacity of warehouse.
Most buildings are still remained and it looks like operational. Parkmore Distillery is described as "The most perfect survivor of the Whisky Boom in 1890s in distilleries".

聖地、Dufftownの町の名をつけるDufftown蒸留所は南側のDullan Waterの辺の低地にある。1896年に出来たDufftownでは新しい蒸留所の部類に入る。
1960年代以降、何度かの改装工事がされたがモルトキルンを含めた昔ながらの建物は残っている。
小雨が降る中、蒸留所を訪れるとスティルハウスに一人のスタッフがモニターの前で監視していた。外見は古くても中は近代的なシステムが導入されている。いくらコンピュータは嫌いと言っても本職はSE。ウィスキー造りという伝統的な産業にどのようにコンピュータシステムが導入されているかは興味深い所だ。
As you know, Dufftown is the Whisky Capital, there are 7 distilleries in or around the town. Dufftown Distillery has the name of Whisky Capital, but it is rather a new distillery in Dufftown.

Craigellachie蒸留所は町の高台にあり蒸留所からは美しいRiver Speyの風景を見ることができる、"Speyside"を実感できる蒸留所。
1891年にWhite Horseの原酒確保のために同社の創業者、Peter Mackieによって建てられた。その後蒸留所はDewar's社の所有となり、1998年よりバカルディ社の系列となっている。
日本に帰ってから花と動物シリーズのボトルを探したが既に遅く、Highlander InnのBarで見たのが最後となった。今となってはその時に飲まなかったことを後悔している。サーモンが描かれたラベルが懐かしい。

It was build for making malt whisky which blend to White Horse Blended Whisky by Peter Mackie, the founder of White Horse Distillers. After that distillery is owned by John Dewar & Sons. It has been a part of Bacardi & Co since 1998.
I looked for the bottle of Craigellachie Single Malt Whisky of Flora and Fauna Series when I came back to Japan but it was too late to got it. I saw it the last time at the bar of Highlander Inn in Craigellachie.
I want to see the beautiful label which draw a sarmon of River Spey.

Caperdonich Distillery (27 Oct 2001)
Caperdonich蒸留所はウィスキーブームの中の1898年、Glen Grantの第２蒸留所として建設された、Rothesで最後に建てられた蒸留所。しかし３年後には早くも操業停止。世の中は一転、ウィスキー不況の時代となっていた。
操業が再開されたのは1965年。2年後にポットスティルを増設し、生産力を高めた。
1977年にシーバス社傘下になり、同社のブレンデッドウィスキーに使用されていた。しかし2002年10月に休止され、2003年3月には売りに出されたが買い手がつかず、現在はおそらく操業していない。

Speyburn Distillery (31 Oct 2001)
Rothesの北側にある谷にひっそりと木々に隠れるようにして建つSpeyburn蒸留所は1897年創業のどちらかといえば小規模な蒸留所。しかし風景との調和は素晴らしく、印象に残る蒸留所の1つ。
CraigellachieからElginへ行くバスへ乗り、Rothesを過ぎると右側に蒸留所が見えた。車内から撮った写真でまともに写ったのは今まででこれだけ。私にとっては貴重な1枚となっている。
Speyburn Distillery lies North of Rothes, in the Glen of Rothes. It is surrounded by forest. It was established in 1897, not large-scale distillery with 1 wash still and 1 spirit still. However, the view of distillery is very beautiful, one of the best scenery distilleries in Scotland.
I took the bus from Craigellachie to Elgin. When the bus passed Rothes I saw Speyburn Distillery on my right. I often try to take photographs on a vehicle, but the photos are not good. This is precious one for me.

Rothesのメインストリートを南に下り、Burn of Rothesに沿って西へ入る。しばらく歩くとGlenrothes蒸留所のモルトキルンが見えてくる。
Ｒｏｔｈｅｓで2番目に建てられたGlenrothes蒸留所は1878年創業。だが創業当初より順調とはいえず、何度もオーナーが代わり、1922年には火事に見舞われている。
現在はHighland Distillers系列で同社の主力商品、Cutty SarkやFamous Grouseの主要モルトウィスキーとして使用されている。

Glen Grant蒸留所は1840年にこの地区の有力者、ジェームスとジョンのグラント兄弟によって建設された。早くからシングルモルトの販売を開始し、現在でもイタリアで人気がある。
近代化された蒸留所のウィスキー造りに携わるスタッフは6名。6週間のウィスキー造りを終えると、次はＧｌｅｎｌｉｖｅｔ蒸留所で6週間。そしてまたGlen Grantへ戻ってくるとのこと。
ガイドの方曰く、"世界で一番ウィスキーを造っている連中だよ"。そりゃそうだ。2つとも売上トップ3に入るのだから。

Strathmill蒸留所はKeithの町外れのRiver Islaの辺にある。1897年創業で当初はGlenIslaという名称だった。19世紀末に建てられた蒸留所らしく鉄道の側にある。専用の支線がKeith～Dufftown Railwayから引かれていた。
訪れるまではあまり意識することのなかった蒸留所だが美しい2つ並んだキルンを見て忘れられない蒸留所となった。帰国後Strathmillが飲みたくて、その頃本国で発売された花と動物シリーズの入荷を心待ちにしたが、日本に入ってきたのは半年以上後だった。やはりマイナーな蒸留所だと実感させられた。
Strathmill Distillery lies beside of River Isla, on the outskirts of Keith. It was build in 1897 and originally called Glen Isla Ditillery. Like a distillery build in the end of 19th, it is beside of railway. Strathmill had a branch line from Keith-Dufftown Railway.
I didn't know about Strathmill Distillery very well, but when I saw its beautiful kiln, it has been one of my favorite distilleries.
I wanted to drink Strathmill malt whisky after I came back to Japan. At that time, Strathmill malt whisky in UD Flora and Fauna edition was started to sell in UK. So I had waited to import Strathmill, but it was more than 6 months later. I thought Strathmill wasn't popular in Japan.

Strathisla蒸留所の第二蒸留所として1957年に建てられたGlen Keith蒸留所はStrathisla蒸留所の裏手側にある。Strathislaの弟分とはいえ、仕込水の取得先が違うのでウィスキー的には全く関係のない蒸留所のような気がする。
Glen Keithの写真を撮っていると近くに住んでいると思われるおじいさんが声をかけてきた。
"向こうにもっと大きな蒸留所があるぞ"
Scottishは旅行者に対してとても親切だ。

Elginの西、River LossieのほとりにあるGlen Morayは1897年、ビール醸造所（1815年創業）を改造して造られた。ビール醸造所が出来る前は処刑場があり、1962年の改築時に工事現場から人骨が出てきたという。しかしウィスキーブームが終わりに近づいた1906年頃に操業が停止された。1920年に現在の所有者、Macdonald & Muir社(現在のGlenmorangie社)によって買収され、操業が再開された。
1958年にはフロアモルティングを止め、サラディンモルティングに変換された。しかしそれが使用されたのは20年ほどでその後、モルトスターに外部委託するようになった。蒸留所のガイドの説明では軽くピートを焚いたモルトを使用しているとのこと。また、その時にポットスティルを増設し、現在の規模になった。
土地が低いために2002年11月にはRiver Lossieの氾濫により、蒸留所が水浸しになり、一時操業停止に追い込まれた。

Convalmore Distillery(29 Oct 2001)
Dufftownの北側の町外れにあるConvalmore蒸留所は1894年のウィスキーブームの時に建てられた。この時期に建てられた蒸留所らしく、鉄道のすぐ横にある。しかしその後の不況、火事、新しい試みとして連続式蒸留器の導入などいろいろな出来事があり、最終的に1985年に閉鎖された。
名前の由来となったConvalhillはDufftownの西側に広がる丘陵地で、Dufftownにある蒸留所の多くがそこの泉から水を引いている。しかしその名前のついた蒸留所が無残な姿を残しているのは何とも心が痛む。現在の所有は南に隣接するGlenfiddich、Balvenieを持つWilliam Grant & Son社。復活させてくれないかとかすかな期待をしている。

名前の由来となったConvalhillはDufftownの西側に広がる丘陵地で、Dufftownにある蒸留所の多くがそこの泉から水を引いている。しかしその名前のついた蒸留所が無残な姿を残しているのは何とも心が痛む。現在の所有は南に隣接するGlenfiddich、Balvenieを持つWilliam Grant & Son社。復活させてくれないかとかすかな期待をしている。

Balvenie蒸留所は1892年にGlenfiddich蒸留所の姉妹蒸留所として北側に造られた。材料をGlen Fiddichと同じにしながらその製法はフロアモルティングやピートを使用する伝統的な手法を守り、全くタイプの違うウィスキーを作り出す。
Glenfiddichで成功を収めたGrant Familyが将来を見越して別タイプのシングルモルトを造ることを考えたのならば、先見の明があったと感心させられる。
最近は一般にも公開され、ツアーにも参加できる。再度訪れたい蒸留所の一つだ。

Craigellachie(1)
Macallan Distillery(30 Oct 2001)
Macallan蒸留所はCraigellachieの町から3km程なので当初の計画では歩いてでも行けるだろうと思っていた。結果的には車で連れて行ってもらったのだけど、もし歩いていたら大変だっただろうなと思える坂道だった。
私にとってMacallanはScotch Single Maltにのめり込むきっかけを作った酒の一つで、初めて飲んだ時の驚きは今でも憶えている。色といい味といい今まで飲んだウィスキーと全然違う。それからしばらくはMacallanばかりを飲んでいた。
昔ながらの製法を守っているのだろうなと思いきや、発酵槽はステンレスを使用するなど近代的な部分も見られた。
天気が悪く、見学者も少なかったので特別にウェアハウスの中で1954年の樽の栓を開けてくれて香りだけ楽しませてもらった。
"これっていやがらせやがな"
などと思いながらも鼻を近づけると、香りだけで酔いそうな素晴らしいウィスキー。2人共樽の側からなかなか離れられなかった。もし誰も見ていなかったら2人は確実に窃盗犯になっていたと思う。

Strath Spey(1)
Glen Livet Distillery(30 Oct 2001)
Speysideへ行くと決めた時、Dufftownと同じくどうしても行きたい場所だったのがGlenlivet蒸留所。私の最初に飲んだモルトウィスキーで、近代ウィスキー産業の幕を開けた蒸留所は是非ともこの目で見てみたい。でもそこまでの交通機関の情報がなく、現地で人に聞く程度の英語力もない。今回はRiver Spey上流の蒸留所は諦めようと予定にも入れていなかった。
それがDufftownで東京のBarmanに出会い、車で次の目的地、Craigellachieまで送ってもらい、それからRiver Spey沿いにGlenlivetまで行くことになった。旅での出会いは非常に大切かつ楽しいものだ。
あまり天気はよくなかったが、これこそがScottish Weather。そう思えば雨も気にならなくなる。
こちらを不思議そうに見つめるBlack Face Sheep。
"雨が降ってるのに酔狂なこっちゃ・・・"
とでも言っているのだろうか。

緑の三角形のボトルに鹿のマークが印象的な、世界でもっとも飲まれているシングルモルトウィスキーを造るGlenfiddich蒸留所は、Dufftownの北の町外れにある。創業者がMortlach蒸留所から独立し、1887年に創業された蒸留所は1960年にシングルモルトの販売を開始した。当時としては画期的なことでウィスキーの歴史上、重要な位置にある蒸留所でもある。Dufftownに3蒸留所を経営し、拠点としているWilliam Grant & Sons社はConvalmoreの敷地も所有している。もう一つ蒸留所を増やして(復活させて)ほしいなと勝手な願いを思い続けている。
